Lovely raw freezer dessert.
You can be creative and substitute different nuts, seeds, and berries.
Crust:
1 cup organic rolled oats
1/2 cup organic almonds, ground
7 organic dates finely cut
1/4 cup organic coconut oil
1 TBSP raw honey
1 tsp. organic vanilla
Mix all the ingredients together. Press firmly into the bottom and sides of a greased 9 or 10 pie pan.
Set aside
Filling:
1/3 cup organic pine nuts
1/3 cups organic sunflower seeds
1/3 cup organic almonds
3 TBSP chia seeds
3 cups frozen organic strawberries
1/4 cup raw honey
1 organic lemon juiced
Place all ingredients in a blender or vita mix blender. Blend until nice and creamy.
POUR FILLING INTO PREPARED PIE CRUST
Topping:
3/4 cup each: organic blueberries, raspberries adn blackberries
1/2 cup organic coarsely ground almonds
1 TBSP raw organic almond butter
1 TBSP organic coconut oil
1 TBSP raw honey
Toss together the frozen berries and nuts. Mix almond butter coconut oil, and honey together, stir mixture into the berry mix until berries are well coated.
Sprinkle over pie filling, and press it firmly down. Cover and freeze.
If it has been in the freezer overnight or longer, thaw for about an hour before slicing and serving.
