HIGH-CALCIUM CHILDREN'S TEA

An excellent blend of herbs that add high quality, naturally bio-chelated calcium and other important minerals to the diet, High Calcium Children's tea is excellent for babies who are teething.  It is also beneficial for children who are undergoing growth spurts or who have had a bone or muscle injury.

3 parts rose hips

2 parts lemon balm

2 parts lemongrass

2 parts oats

1 part nettle

1 part raspberry leaf

1/2 part cinnamon chips

Combine the herbs and store in an airtight container.  To make a tea, prepare as an infusion.

Infusions

Infusions are made from the more delicate parts of the plant, including the leaves, flowers, an aromatic parts.  These fragile plant parts must be steeped, rather than simmered, because they give up their medicinal properties more easily than  the tougher roots and barks.   To make an infusion pour boiling water over the herbs and let steep for 30 to 60 minutes.  

Herbal Mixture suggested dosages for children: 1 cup of water/to suggested amount of herb

Younger than 2 years 1/2 to 1 teaspoon

 2 to 4 years 2 teaspoons

4 to 7 years 1 tablespoon

7 to 11 years 2 tablespoons 

Example: If you have a 4 year old.  I cup boiling water poured over 1 tablespoon of herbal mixture.  You can sweeten it with honey while it is warm and steeping.   Strain after 30 to 60 minutes.   Have your child sip away while you read them a book.  

Adult High-Calcium Tea: 

This calcium-rich tea is soothing and calming to the nerves.  This  is most effective when used over a 3 to 4 month period. 

1 part horsetail ( shave grass)

1 part nettle

1 part oats and oatstraw 

Combine the herbs.  prepare as an infusion.  Drink 3 to 4 cups daily 

Calcium

Add Calcium to your diet! Not only is it important for strong bones and teeth, it is also essential for healthy nerve function.   It will help prevent nervousness, irritability, muscle spasms, muscle cramping, hyperactivity, and insomnia.

Digestive forms of calcium are in seaweed, cultured RAW milk products without sweeteners,most dark-green leafy vegetables such as spinach, chard, broccoli, turnip greens,kale, beet greens, and parsley.   Organic RAW almonds and sesame seeds.   

Herbs that are excellent sources of high quality calcium: Amaranth, chickweed, dandelion greens, horsetail, mustard greens, nettle, oats and watercress

Remember milk is touted as a good source of calcium, it is in fact, sorely lacking in the amounts and type needed by our bodies.  Do not rely on getting your calcium  from milk products.....  

For comparison:  

3 1/2 ounces of cow's milk contain 118 mg of calcium.  

The same amount of Hizike ( a mild-flavored seaweed) contains 1,400 mg. Kelp contains 1,093 mg, and wakame, 1,300 mg.  

If you choose to take a calcium supplement, look for supplements that are bio-chelated for easier assimilation and drink the High Calcium Tea.

Longevity Chai

A robust, spicy herbal blend originating in India, Nepal, and Tibet, chai comes in literally thousands of varieties.  The following chai blend is especially formulated for longevity.  Serve it hot or chilled with froth steamed milk.  You can easily make frothy milk at home with an inexpensive kitchen device that looks like a french coffee press, or whip it in a blender. 

5 tablespoons black tea leaves

6 slices fresh ginger root, grated  or a tablespoon of dried ginger 

3 tablespoons cinnamon chips ( or 1 stick broken into small pieces)

1 tablespoon sliced fo-ti 

1 tablespoon sliced genseng root

1 tablespoon sliced licorice root

2 teaspoons cardamom, crushed

6 black peppercorns

4 whole cloves 

6 cups filtered water or spring water

 Local honey, from your local bee keeper 

Frothy milk of choice.  Please stay away from soy milk it is not good for you.  Also read your labels, rice milk has canola oil in it.  

Examples of milks:  Hemp, raw dairy, almond or coconut.  I use organic canned coconut milk.  Also read your labels on your milks.  Stay away from ones that add sugar.... 

1.  Gently warm the herbs and water in a covered saucepan for 10 to 15 minutes.  Do not boil

2.  Strain the mixture into a warmed teapot and add local honey to taste.  Pour the chai into large cup, add a generous heap of frothy milk, and sprinkle with nutmeg or cinnamon. 

Enjoy with a good book, or sit outside with nature.

A highly nourishing and restorative blend, 7-herb Long-Life Soup is an excellent broth to serve someone who is sick or recovering from illness.  

This is a wonderful recipe that can incorporate any number of tonic or adaptogenic herbs.  Use fresh herbs whenever possible, but if they-re unavailable, chopped dried roots will do.  This soup also may be made in a organic chicken broth base.

Extra virgin olive oil

2 onions, sliced or chopped

3 cloves of garlic, chopped

3 quarts filtered water or organic chicken stock

8 large shiitake mushrooms ( fresh or dried), chopped

4 ounces fresh burdock root ( or 2 ounces dried), thinly sliced

4 ounces fresh dandelion root ( or 2 ounces dried), thinly sliced

1 ounce astragalus, thinly sliced

1 ounce fo-ti cut and sifted 

1 tablespoon fresh grated ginger root

1 ounce ginseng root ( any variety) 

Miso paste of choice 

1.  In a large pot, heat just enough olive oil to coat the bottom of the pan.  Add the onions and garlic and saute until tender and golden. 

2.  Add the water and bring to a boil

3.  Add the mushrooms and herbs, turn down the heat, and simmer over low heat for several hours.

4.  When the roots are tender, turn off the heat and strain out the herbs.  (You can leave the herbs in, especially if most of them re fresh.)  Add miso paste to taste.  Do not boil the miso, as it destroys its valuable enzymes.  Add other seasonings and chopped vegetables as desired.

Keeping Mosquito's Away

Some ideas to keep the bugs away:  Don't eat bananas during mosquito season--mosquitoes love bananas! There is something about how your body processes the banana oil that attracts these female sugar-loving insects. Supplement with one vitamin B-1 tablet a day from April through October. Add 100 mg of B-1 to a B-100 Complex daily during the mosquito season.

Natural insect repellents  is made from the clear liquid vanilla (real vanilla) It is reported to work great for mosquitoes and ticks, and spreading a little vanilla mixed with olive oil on your skin smells great.

The following ideas that many people swear by these methods for keeping those pests away.

Avoiding sugar: some say that sweet blood attracts mosquitoes. Mosquitoes actually do rely on sugar from plants as their main source of energy. Female mosquitoes only suck blood when they are about to lay eggs. Otherwise, male and female mosquitoes get their food from flowers.

Avoiding bananas: This goes along with the sugar theory, but the consumption of bananas is blamed in attracting mosquitoes.

Eat garlic: Many people claim that regularly eating raw garlic keeps the mosquitoes away. Of course you have to weigh the pros and cons here. You may keep the mosquitoes away with garlic but you may also keep your friends and family away too.

B Vitamins: Also not proven, but it is certainly often quoted that B vitamins, especially thiamine, can deter mosquitoes.

Herbs high in thiamine include: alfalfa, bladderwrack, burdock root, catnip, cayenne, chamomile, chickweed, eyebright, fennel seed, fenugreek, hops, nettles, oatstraw, parsley, peppermint, raspberry leaves, red clover, rose hips, sage, yarrow, and yellow dock.

Foods high in thiamine include:  Brown rice, egg yolks, fish, legumes, liver,  peas, poultry, rice bran, wheat germ, and whole grains.  Organic of course

Yarrow Bug Spray 

For this recipe you’ll need:

  1. Yarrow (either fresh or dried flowers and leaves)
  2. Alcohol (vodka works fine)
  3. Catnip Essential Oil
  4. Spray bottles

If using fresh yarrow, fill a jar with yarrow flowers and leaves.

If using dried yarrow, fill a jar about half full with yarrow.

 

Cover yarrow with Vodka and let sit for a week in the cupboard,  Shake at least once a day. 

After the week is over strain yarrow.  Preserve your liquid and put your yarrow in the compost

Fill a spray bottle with half the liquid and then fill the rest of the way with water. You could also just use the alcohol extraction without any additional water. Of course this costs more in the long run.

Place a few drops of catnip essential oil in the spray bottle. Catnip essential oil has been shown to be more effective than DEET at deterring mosquitoes. You could also try using lavender or sage essential oils.

Grain prices

The drought that is gripping most of the nation has caused grain prices to rise 40 percent in the last two weeks, with more inflation to come. Farmers in Montana were slaughtering their animals early. I asked Brian of Simply Grown Beef about this, and he confirmed my hypothesis that commercial products would soon enough be more expensive than organic (in many ways they already were, in cost to the environment and the health of the consumer, but here I'm just talking about money). Since his company's cattle are grass fed, grains are a non issue for him. While commercial meat and dairy prices are skyrocketing, organic prices are not. We eat simply Grown Beef, just had some of their hamburger last night after our class. Delicious!

Brainpower Seasoning Sprinkle

Use this seasoning sprinkle on salads, soups, and in any main course dish. 

3 parts sesame seeds

4 parts nutritional yeast

2 parts kelp

1 part powdered ginkgo

1 part powdered gotu kola

1 part spirulina

1/4 powdered rosemary 

 Also add kitchen herbs of choice, powdered, example thyme and garlic. 

1.  Toast the sesame seeds in a heavy skillet, then grind them in a seed or nut mill 

2.  Combine the sesame seeds with the remaining ingredients, adding kitchen herbs of choice to taste.  

Simpler's Method of Measurement are given as "parts"  

A part is a unit of measurement that can be interpreted to mean cup, ounce, pound, tablespoon or teaspoon

Pickled Beets with Star Anise

Star anise!  It is the fruit of the badiana tree, originally from China.  In Japan the tree is planted in temple gardens and on tombs.  The powdered bark is used as incense.  Both a stimulant and a diuretic, with carminative properties  (an herb or preparation that either prevents formation of gas in the gastrointestinal tract) as well, star anise will promote digestion ad sweeten the  breath if chewed in small quantities after a meal. 

Organic ingredients are best for your health... 

6 poundsd small beets

2 cups cider vinegar

2 cups water

2 cups sugar

4 star anise

1 tsp fennel seed

1 tsp cloves

1 tsp peppercorns 

Cut off beet leaves ( use the greens in your salad) leaving stems at crown.  Cook beets until tender.  Cool and peel.

Combine vinegar, water, sugar and spices in heavy pot.  Bring to a boil, add beets, then reduce heat and simmer 10 minutes. 

Pack beets into hot, sterilized jars.  Fill with cooking liquid and seal.  

Makes 14 cups or 7 16 ounce jars.

Herb Flavored Oil

Native to the eastern Mediterranean, the olive tree can live thousands of years  So it is quite possible that the olive trees now standing at Gethsemane garden were there nearly 2000 years ago. 

Organic Ingredients make this a super healthy salad dressing 

2 garlic gloves, crushed

2 sprigs fresh rosemary

10 sprigs fresh marjoram

6peppercorns

1 pinch fennel seeds

1 sprig fresh dill or summer savory

2 cups olive oil 

Place herbs and spices in clean bottle and fill with oil.  Seal and let the flavors blend for a week before using.

FIGS

Among the world's oldest known foods, figs were used to sweeten dishes long before sugarcane was widely cultivated. Figs ripen during mid- to late summer, with some varieties lingering for a second harvest in early fall. Their skin can be purple, green, yellow, brown or white, and their flesh ranges from pale gold to deep, rich red. Fresh, ripe figs are best eaten out of hand but are also excellent served with cheese, grilled to accompany cured meats or savory salads, and paired with creamy desserts.

Figs are rich in calcium, iron, phosphorus and potassium. Vitamin C and the B group vitamins are also present in small quantities. They are also high in fibre. Figs have the highest overall mineral content of all common fruits. A 40 gram (1/4 cup) serving provides 244 mg of potassium (7% of the DV), 53 mg of calcium (6% of the DV) and 1.2 mg of iron (6% of 

Preparing
Rinse fresh figs under cold running water and gently pat dry before serving. Overhandling will bruise the delicate fruit. The peel is edible and, unless specified in a recipe, can be left on the fruit. Use a sharp paring knife to cut figs in half lengthwise.

Fig Salad:

RECIPE:
Serves 1

large handful of fresh lettuce leaves
3 fresh figs, sliced in quarters
1 oz. walnut halves, toasted dry in a pan
sprinkling of blue cheese
2 tbsp. homemade balsamic dressing

Balsamic Vinaigrette:
2 1/2 tbsp mustard
4 tbsp balsamic vinegar
1/2 cup fresh oregano
1 1/2 cups olive oil
1 tsp agave / honey
1/4 tsp salt
1/4 pepper

DIRECTIONS:
Put all the ingredients,  except the oil in a blender. With the machine running, drizzle in oil. Vinaigrette will emulsify.
Taste for additional seasoning if required.

Fig Salad:

Fig Salad w/ Arugula,  and Walnuts:

2 heads of fresh arugula, washed and dried 
4 fresh figs, quartered (yum)
1/4 cup of walnuts, toasted lightly (watch that they don't burn)


Dressing:
2 tbsp of fig vinegar or balsamic vinegar
1 tsp of tarragon mustard
6 tbsp of good extra virgin olive oil
1 tbsp of walnut oil (optional)

Plate your arugula on a large platter and top w/ quartered figs.
Sprinkle walnuts and  all over salad.
Keep cool until ready to serve.
Just before serving, spoon dressing over salad.

Hooray for Saturday Public Market!

Last Saturday I shopped the market and bought fresh salad greens,cucumber, corn, beans, tomato, peaches and cherries. I have not been able to eat cucumbers purchased at the regular grocery stores, but have bought them for the rest of my family - they don't have any digestive issues with cucumbers. So, washing and slicing the cucumber I purchased at the market, I was impressed by the appearance and decided to try a slice. The cucumber tasted delicious and I didn't notice any digestive problems or heartburn. I will definitely buy more fresh produce when I know it's organic. The corn was as I remember it tasting when I was a child - right from my dad's garden. I am so satisfied with all the items I purchased. Thank you, organic local farmers!

Summer Cleansing and Fortifying Salad

This salad feeds the senses of smell and sight, as well as delights the taste buds.   This salad provides the body with important vitamins, minerals, fiber, nutrition, tissue support.  Disease prevention at it's best. Eat this salad at least 5 times a week. 

1/4 cup flaxseed oil

1/4 cup olive oil

1 clove crushed garlic

8 Greek or Italian olives, or 4 of each, pitted and sliced, (ferrous sulfate free olives)

3 fresh green onions, chopped

1 cup balsamic vinegar

1 tablespoon sweet basil

1 tablespoon rosemary

1 tablespoon thyme

2 sweet peppers, one yellow, one red, thinly sliced

3 tomatoes. sliced

2 heads of dark green leafy lettuce, (choose two different kinds that are in season in your area) washed and broken into bite-sized pieces

sea salt to taste

1/2 cup chopped parsley

1/2 cup chopped chives

1.  Pour the oils into a wooden bowl, and spread the oils onto the sides and bottom of the bowl. 

2.  Add the garlic, lives and green onions.  Use a wooden spoon to gently spread them over the whole bowl.  Repeat this process with half of the balsamic vinegar, sweet basil, rosemary, and thyme.  Allow to sit at room temperature for 15 minutes. 

3.  Stir in the peppers, tomatoes, and carrots.  Add the lettuce, toss, and allow to sit at room temperature for 5 minutes. 

4.  Add the remaining basil, rosemary, and thyme:  some sea salt to taste and the parsley,  Toss well. Add more balsamic vinegar if desired.  

5.  Sprinkle the top with chives.   

Yield:  6 to 8 servings

Saturday Public Market and CSA Meal

A  July meal prepared for the family, (Sunday, special dinner night) by my teenage daughter.

Hamburger with roasted garlic in it.  Beef from Simply Organic Beef from the Saturday Public Market.  Garlic from Dennison's Farms, which I purchased from the Saturday Public Market

Buns, Homemade, my teenage daughter made them from scratch.  Homemade by the way, means, that it does not come from a box or bag...

Pickled Beets with rice vinegar.  Beets from Growing Wild Farm

German Potato Salad, which has balsamic vinegar, olive oil, raw onions and sea salt.  Purple potatoes from Growing Wild Farm.  The rest of them from Dennison's Farm. The onions were also from Dennison's Farm.  

Cucumbers and salad greens from Dennison's Farm.

The Lemonade was made from scratch.  Lemon concentrate, water and agave syrup.  

The whole meal was organic.  My daughter did a fantastic job!

Egg Free Bran Muffins

2 Cups Organic Spelt Flour

1 Cup Organic Bran

1 1/2 tsp. baking soda 

1/2 tsp. sea salt

2 cups of buttermilk or milk of choice

1/3 cup honey

1/4 cup organic olive oil or organic sunflower oil

1/2 cup organic raisins

1/2 cup chopped organic walnuts or organic nut of choice

Stir dry ingredients together and make a well in the middle.  Pour in the liquid ingredients, raisins and walnuts.  Stir just enough to moisten flour.  

Spoon into 12 large well -oiled muffin tins.  Bake at 425 degrees for 18 -20 minutes. 

Today I added 1 tablespoon cinnamon just to go with the cold weather we are having.

Something Beautiful To Share

As most of you know I suffer from having Chemical Injury.  There was a time in my life I did not think I was going to make it.  I still suffer, and as long as we still have chemicals in our world my life is made very difficult.

A few weeks ago at my last doctor visit, I new that my body was shutting down,  Things that I normally due were very difficult.  I am a fighter, so I never give up and I push through.    I  had a very busy schedule that I needed to get through, there were times that I was not sure if I was going to get through it, but, I did. Now I am having to deal with my health hitting the wall.    To move, right now means joints and muscles burning, my kidneys and liver are not happy.  I have a swollen foot and to top it off I am having trouble keeping my eyes open.  Again, I am a fighter and I am pushing through, I am still walking up that mountain.  All of it feels so difficult.

Last night I was not doing well.  It hurt just to move so I decided to go outside.  My two Arabians were in the driveway eating hay.  They both looked up at me and watched me.  I realized that they new something was wrong.  I wish I could describe the connection I felt through their eyes as they watched.  I ended up sitting by them.  I wanted to listen to the birds sing their night song and be by the horses.

My Arabian Horse named, Kamar (which means beautiful moon) came over to me.  She new something was very wrong.  At this point Joseph just got home and was standing by me.  Kamar would not let the dog or cat come close to me, she was being extremely protective.  

What happend next was one of the most beautiful moments in my life.  She was doing energy work on me.  Yes, she was doing Reiki.  At first I was not sure what she was doing but, Joseph recognized it right away.  Kamar was breathing really deep like a Reiki Master does.  She moving her head around me and putting her mouth on me.   I can still feel and hear her breath.  I can still feel the connection that I saw in her eyes.    Yes,  Kamar pushed away most of what I was feeling.

 It was an incredible moment between human and horse.  A moment and energy exchange that I feel so gifted to experience.  A moment to remember that the power of love is an incredible healer.

BPA In Your Garden?

A few plus years ago we bought a new garden hose for our Kung Fu School business.  I hooked it up and right away all this white looking liquid was coming through the hose and it smelled terrible.  It was toxic !  That was my wake up call that another thing in my life needed to be banned.  It was time to do some research and find a safe alternative.  At that point we purchased for our home use, hoses that were semi-safe.  

 

Another wake up call for us was last summer, my daughter Sophia and I were at a garden store.  She picked up a sprinkler.  It had a California warning label on it and after holding it,  she noticed a toxic smell on her hands!  For most people who are not aware or wear scents on themselves, they wouldn't notice. Again, we were remind of how we need to stay on top of it to protect ourselves, our garden and the earth.  Big corporations, big industry do not care about any of that.  They only care about their bottom line.  

I came across (Thanks to Wildly Organic Women, on Facebook) this great article about the problem of toxic garden tools, hose's, gloves etc.  It also has some great references.

 Please!! to protect yourself and the earth, ban these things in your life and pass the knowledge on.
